A few things make us different: We are owner managed, we source all of our Jersey milk from the farmers directly, and we do not rely on the electrical power grid but produce all of our electricity on site. All of our Grade A Cow Milk products are produced using non-homogenized vat-pasteurized Jersey Milk. Jersey Milk has a distinctly sweeter flavor and is creamier than that of Holstein milk.
Cream on Top
Our products have a rich layer of cream on top as a result of non-homogenization. This is an intended property of our milk. The cream layer has to be shaken to redistribute it into the milk. The layer of cream is very pronounced on the whole milk. The milk below the cream layer is less than 1% fat.
Our products are vat-pasteurized using lower temperatures and longer times (than HTST) that results in a unique flavor profile. This longer pasteurization time is more thorough and results in milk with a longer shelf life than traditional milk.
Our experience has found that proven traditional techniques minimize the processing steps while increasing product quality.
Our skim milk, while having a creamier taste than other skim milk, is just as low in fat as other skim milk (as it meets the federal labeling requirements for skim and is tested weekly).
Because of the appearance due to separated cream you may see globs of cream stuck to sides of the container or in your glass. This will become more pronounced over time and the longer the container has been opened. The milk has not gone bad, however the cream does harden over time. This is similar to the process used to make butter. However, if in doubt throw it out. We’ll make more and next time drink it faster. You should go through a container once a week.

• Our yogurt is lower in sugar than the big guys and uses only cane sugar and maple syrup to achieve its sweetness (No high fructose corn syrup here).
• Our yogurt does not use any additives or stabilizers to obtain its thick natural set. We have found there are many chefs and household cooks who use the plain yogurt for cooking and preparation of yogurt-based sauces.
Our cows milk yogurt products have a 3-5 mm layer of rich cream on top. If customers prefer a lower fat product they can simply skim the cream layer on top and are left with a product that is less than 1% fat, but still rich in protein and flavor.
